Ingredients
- 2 chicken breasts
- 1/2 cup olives
- 2 fresh tomatoes, chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 teaspoon oregano
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Season the chicken breasts with salt, pepper, and oregano, then add to the pan.
- Cook until browned and cooked through, about 6-7 minutes per side.
- Remove the chicken and set aside.
- In the same pan, add minced garlic, chopped tomatoes, and olives.
- Cook for 3-4 minutes until the tomatoes soften.
- Stir in lemon juice and add the chicken back to the pan.
- Top with crumbled feta cheese and cook for an additional 2 minutes.
- Serve warm.
Notes
For added flavor, marinate the chicken in olive oil, lemon juice, and oregano for a few hours before cooking.
