Ingredients
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp ground black pepper
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp paprika
- 1/2 tsp turmeric powder
- 2 chicken breasts, sliced
- 2 tsp lemon juice
- 2 tsp olive oil
- 4 tsp seasoning mix
- 1 onion, finely chopped
- 1 tsp garlic, finely chopped
- 1 cup rice, rinsed and soaked
- 2 and 1/4 cups low-sodium chicken broth
- 1 bay leaf
- 1-inch cinnamon stick
- 1/2 cup frozen peas
Instructions
- Marinate the chicken with lemon juice, olive oil, and seasoning mix.
- Heat a pan and sauté chopped onion and minced garlic until translucent.
- Add marinated chicken and brown on all sides.
- Add soaked rice, stir gently to combine.
- Pour in chicken broth, add bay leaf and cinnamon stick, then bring to a boil.
- Reduce heat, cover, and simmer for 18-20 minutes until rice is cooked.
- Add frozen peas in the last 5 minutes of cooking.
- Remove from heat, fluff rice, and add another teaspoon of lemon juice.
Notes
For variations, swap chicken for shrimp or use quinoa instead of rice. Great for meal prep.
