Description

A healthy and delicious Mediterranean baked fish dish, packed with fresh vegetables and herbs, perfect for busy weeknights or dinner with friends.


Ingredients

  • 4 fish fillets (such as cod or tilapia)
  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tablespoon fresh thyme or oregano
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, arrange the fish fillets.
  3. In a bowl, toss the cherry tomatoes, bell pepper, zucchini, and garlic with olive oil, thyme, salt, and pepper.
  4. Spread the vegetable mixture around and on top of the fish in the baking dish.
  5. Place lemon slices on top of the fish.
  6. Bake for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.
  7. Serve hot and enjoy your Mediterranean feast.

Notes

For additional flavor, marinate the fish in olive oil, lemon juice, and herbs for 30 minutes before baking. You can customize the vegetables and use fresh or dried herbs.
