Ingredients
- 4 salmon fillets
 - 1 cup cream cheese
 - 1/2 cup grated Parmesan cheese
 - 1/2 cup sun-dried tomatoes, chopped
 - 2 cups fresh spinach
 - 2 tablespoons olive oil
 - 2 cloves garlic, minced
 - Salt and pepper to taste
 - Fresh herbs (like basil or parsley) for garnish
 
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper, then sear them for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
 - In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
 - Add sun-dried tomatoes and spinach to the skillet, cooking until the spinach is wilted.
 - Lower the heat and mix in the cream cheese and Parmesan, stirring until melted and creamy.
 - Return the salmon to the skillet to coat it with the sauce, cooking for an additional minute.
 - Serve warm, garnished with fresh herbs.

Make sure not to overcook the salmon. Feel free to adjust the ingredients based on your preference.
