Ingredients

  • 4 salmon fillets
  • 1 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like basil or parsley) for garnish


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper, then sear them for about 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add sun-dried tomatoes and spinach to the skillet, cooking until the spinach is wilted.
  4. Lower the heat and mix in the cream cheese and Parmesan, stirring until melted and creamy.
  5. Return the salmon to the skillet to coat it with the sauce, cooking for an additional minute.
  6. Serve warm, garnished with fresh herbs.
