- ½ cup sun-dried tomatoes, drained and sliced thin
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 1 teaspoon Italian seasoning

- 1 teaspoon paprika
- 1 cup finely shredded parmesan cheese
- 1 (19 oz) bag frozen cheese tortellini
- 2 cups chopped baby spinach
- Fresh parsley for garnish
Instructions
- Season the chicken with black pepper, Italian seasoning, and paprika.
- Heat olive oil and brown the chicken in a skillet for 6-8 minutes.
- Add butter, garlic, and sun-dried tomatoes, sauté for 30 seconds.
- Pour in chicken broth and heavy cream; stir in seasonings and parmesan until melted.
- Combine chicken, tortellini, and spinach; simmer for 5 minutes.
- Garnish with parsley and serve hot.
Notes
For an extra creamy texture, use full-fat cream. You can substitute chicken thighs for breasts for a juicier option.
