A creamy and flavorful pasta dish combining seared chicken, sun-dried tomatoes, garlic, and Parmesan in a luscious cream sauce. Perfect for a cozy dinner or a date-night meal.

- 2 boneless, skinless chicken breasts
- 8 oz pasta (penne, fettuccine, or your choice)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- ¼ tsp chili flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Season and Sear Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Make the Sauce: In the same pan, sauté garlic until fragrant. Add sun-dried tomatoes. Pour in heavy cream and chicken broth. Stir in Parmesan cheese, Italian seasoning, and chili flakes (if using). Simmer for 5–7 minutes until thickened slightly.
- Cook the Pasta: Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain the pasta.
- Combine: Slice the cooked chicken and return it to the sauce. Add cooked pasta and a splash of reserved pasta water. Toss everything together to coat in the sauce.
- Serve: Garnish with fresh basil or parsley and additional Parmesan. Serve hot with garlic bread or a fresh green salad.
Notes
You can use pre-cooked chicken to speed up prep time. Substitute spinach or mushrooms for added veggies. For a lighter version, use half-and-half instead of heavy cream.
