Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne, fettuccine, or your choice)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • ¼ tsp chili flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Season and Sear Chicken: Season chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  2. Make the Sauce: In the same pan, sauté garlic until fragrant. Add sun-dried tomatoes. Pour in heavy cream and chicken broth. Stir in Parmesan cheese, Italian seasoning, and chili flakes (if using). Simmer for 5–7 minutes until thickened slightly.
  3. Cook the Pasta: Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain the pasta.
  4. Combine: Slice the cooked chicken and return it to the sauce. Add cooked pasta and a splash of reserved pasta water. Toss everything together to coat in the sauce.
  5. Serve: Garnish with fresh basil or parsley and additional Parmesan. Serve hot with garlic bread or a fresh green salad.

Notes

You can use pre-cooked chicken to speed up prep time. Substitute spinach or mushrooms for added veggies. For a lighter version, use half-and-half instead of heavy cream.
