For the Chicken:
- 1 ½ lbs boneless, skinless chicken breast (cut into 1-inch pieces)
- Salt and pepper to taste
- 1 tablespoon olive oil
For the Pasta:
- 10 oz penne pasta
- Salted water for boiling
For the Sauce:
- 3 tablespoons butter
- 2 teaspoons minced garlic
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 cup sun-dried tomatoes (drained and chopped)
- 1 teaspoon paprika
- 2 teaspoons Italian seasoning
- Fresh basil for garnish
Instructions
- Cook the pasta: Boil salted water and cook pasta until al dente. Drain and set aside.
- Sear the chicken: Season chicken with salt and pepper. Heat olive oil in a skillet and sear chicken for 6–8 minutes until golden and cooked through. Remove from skillet and set aside.
- Make the sauce: In the same skillet, melt butter over medium heat. Add garlic and cook for 30 seconds. Stir in flour and whisk to form a smooth paste.
- Add liquid: Gradually whisk in chicken broth and heavy cream, stirring constantly until smooth and slightly thickened.
- Flavor the sauce: Add parmesan cheese, sun-dried tomatoes, paprika, and Italian seasoning. Stir until combined and the cheese is melted.
- Combine: Return cooked chicken and pasta to the skillet. Toss to coat evenly with the sauce.
- Serve: Garnish with fresh basil and additional parmesan if desired. Serve warm.
Notes
You can substitute spinach or mushrooms for extra vegetables. Use gluten-free pasta and flour if needed. Leftovers reheat well the next day.
