For the Pasta:

  • 10 oz penne pasta
  • Salted water for boiling

For the Sauce:

  • 3 tablespoons butter
  • 2 teaspoons minced garlic
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup sun-dried tomatoes (drained and chopped)
  • 1 teaspoon paprika
  • 2 teaspoons Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Cook the pasta: Boil salted water and cook pasta until al dente. Drain and set aside.
  2. Sear the chicken: Season chicken with salt and pepper. Heat olive oil in a skillet and sear chicken for 6–8 minutes until golden and cooked through. Remove from skillet and set aside.
  3. Make the sauce: In the same skillet, melt butter over medium heat. Add garlic and cook for 30 seconds. Stir in flour and whisk to form a smooth paste.
  4. Add liquid: Gradually whisk in chicken broth and heavy cream, stirring constantly until smooth and slightly thickened.
  5. Flavor the sauce: Add parmesan cheese, sun-dried tomatoes, paprika, and Italian seasoning. Stir until combined and the cheese is melted.
  6. Combine: Return cooked chicken and pasta to the skillet. Toss to coat evenly with the sauce.
  7. Serve: Garnish with fresh basil and additional parmesan if desired. Serve warm.

Notes
