Description
A refreshing and light Marinated Cucumber Salad, perfect for summer barbecues and picnics.
Ingredients
- 1 or 2 large English cucumbers
- 2 tablespoons extra-virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon Greek yogurt (or mayonnaise)
- 1 clove garlic, finely minced or crushed
- 1 tablespoon minced fresh dill, plus additional for garnish
- 2 tablespoons red onion, sliced
- Salt and freshly ground black pepper, to taste
Instructions
- Slice the cucumbers and place them in a large bowl.
- In a separate bowl, whisk together the olive oil, apple cider vinegar, Greek yogurt (or mayonnaise), minced garlic, and minced dill.
- Pour the dressing over the cucumbers and add the sliced red onion.
- Toss everything together until well combined.
- Season with salt and freshly ground black pepper to taste.
- Let the salad marinate in the refrigerator for at least 30 minutes.
- Garnish with additional dill before serving.
Notes
Choose fresh cucumbers for the best flavor and crunch. Feel free to add more dill for a stronger flavor.
