Description

A refreshing and light Marinated Cucumber Salad, perfect for summer barbecues and picnics.


Ingredients

  • 1 or 2 large English cucumbers
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon Greek yogurt (or mayonnaise)
  • 1 clove garlic, finely minced or crushed
  • 1 tablespoon minced fresh dill, plus additional for garnish
  • 2 tablespoons red onion, sliced
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Slice the cucumbers and place them in a large bowl.
  2. In a separate bowl, whisk together the olive oil, apple cider vinegar, Greek yogurt (or mayonnaise), minced garlic, and minced dill.
  3. Pour the dressing over the cucumbers and add the sliced red onion.
  4. Toss everything together until well combined.
  5. Season with salt and freshly ground black pepper to taste.
  6. Let the salad marinate in the refrigerator for at least 30 minutes.
  7. Garnish with additional dill before serving.

Notes

Choose fresh cucumbers for the best flavor and crunch. Feel free to add more dill for a stronger flavor.
