Description

This cheesy vegetable casserole blends frozen cauliflower, mixed vegetables, sour cream, and cream of mushroom soup into a creamy, savory bake topped with crispy French fried onions. Perfect for a cozy family meal or make-ahead freezer option.


Ingredients

  • 4 cups frozen cauliflower florets
  • 4 cups mixed frozen vegetables (carrots, corn, peas)
  • 20 oz cream of mushroom soup (canned)
  • 1 cup sour cream
  • 2 cups shredded white cheddar cheese
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 1 cup French fried onions
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix cauliflower, mixed vegetables, cream of mushroom soup, sour cream, cheddar cheese, salt, and pepper.
  3. Reserve half of the French fried onions for topping, and stir the rest into the mixture.
  4. Pour the mixture into an ungreased casserole dish and spread evenly.
  5. Bake for 50 minutes until heated through and bubbly.
  6. Remove from the oven, sprinkle with remaining French fried onions and parsley.
  7. Return to the oven and bake an additional 5–10 minutes until golden on top.
  8. Serve warm or allow to cool completely if freezing for later.

Notes

You can substitute sour cream with Greek yogurt for a lighter option. Use fresh vegetables if preferred; just blanch them before baking.
