- 4 cups frozen cauliflower florets
- 4 cups mixed frozen vegetables (carrots, corn, peas)
- 20 oz cream of mushroom soup (canned)
- 1 cup sour cream
- 2 cups shredded white cheddar cheese
- ½ tsp salt
- ½ tsp ground black pepper
- 1 cup French fried onions
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix cauliflower, mixed vegetables, cream of mushroom soup, sour cream, cheddar cheese, salt, and pepper.
- Reserve half of the French fried onions for topping, and stir the rest into the mixture.
- Pour the mixture into an ungreased casserole dish and spread evenly.
- Bake for 50 minutes until heated through and bubbly.
- Remove from the oven, sprinkle with remaining French fried onions and parsley.
- Return to the oven and bake an additional 5–10 minutes until golden on top.
- Serve warm or allow to cool completely if freezing for later.
Notes
You can substitute sour cream with Greek yogurt for a lighter option. Use fresh vegetables if preferred; just blanch them before baking.
