Delicious low sugar cookies made with applesauce, oats, and whole wheat flour, perfect for snacks or breakfast.
Ingredients
- 1 cup applesauce
- 1 cup oats
- 1/2 cup whole wheat flour
- 1/4 cup brown sugar or sweetener of choice
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup raisins or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the applesauce, brown sugar, and vanilla extract.
- In another bowl, combine the oats, whole wheat flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients and stir until well combined. If desired, fold in raisins or nuts.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Best enjoyed fresh out of the oven. Can be stored in an airtight container for up to a week.
