Description

A creamy and hearty low-carb white chicken chili that’s quick and easy to prepare, perfect for a busy weeknight meal.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 medium cauliflower, riced
  • 1 can (15 oz) white beans, drained
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • Pepper to taste
  • 1 cup shredded cheese, optional
  • Fresh cilantro for garnish


Instructions

  1. Heat a large pot on medium heat and add the diced onion and minced garlic. Sauté until soft and translucent.
  2. Add the shredded chicken, riced cauliflower, and white beans to the pot. Mix well.
  3. Pour in the chicken broth and stir in cumin and chili powder. Stir to combine.
  4. Reduce heat and let it simmer for 20 minutes.
  5. Season with salt and pepper to taste.
  6. If desired, stir in the shredded cheese until melted.
  7. Serve hot and garnish with fresh cilantro.
