Description
A delicious low-carb casserole featuring juicy steak and sautéed vegetables, smothered in provolone cheese. A hearty and satisfying dish without the extra carbs.
Ingredients
- 1 lb thinly sliced steak (such as ribeye or flank steak)
- 1 bell pepper (sliced)
- 1 onion (sliced)
- 2 cups mushrooms (sliced)
- 2 cups shredded provolone cheese
- 2 cups cauliflower rice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers and sauté until they begin to soften, about 5-7 minutes.
- Add the thinly sliced steak and mushrooms, seasoning with salt and pepper. Cook until browned and cooked through, about 5-10 minutes.
- Stir in the cauliflower rice until well combined.
- Transfer the mixture to a baking dish and top with shredded provolone cheese. Bake for 20-25 minutes until the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
Consider adding garlic powder for extra flavor. Pair with a side salad or zucchini noodles for a complete meal.
