Ingredients

  • 1 lb thinly sliced steak (such as ribeye or flank steak)
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cups mushrooms (sliced)
  • 2 cups shredded provolone cheese
  • 2 cups cauliflower rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers and sauté until they begin to soften, about 5-7 minutes.
  3. Add the thinly sliced steak and mushrooms, seasoning with salt and pepper. Cook until browned and cooked through, about 5-10 minutes.
  4. Stir in the cauliflower rice until well combined.
  5. Transfer the mixture to a baking dish and top with shredded provolone cheese. Bake for 20-25 minutes until the cheese is melted and bubbly.
