Description

A delicious, guilt-free dinner that satisfies pizza cravings without the carbs.


Ingredients

  • 1 cup cooked chicken or ground turkey
  • 1 cup bell peppers, diced
  • 1 cup zucchini, diced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine cooked chicken or ground turkey, bell peppers, zucchini, marinara sauce, Italian seasoning, salt, and pepper. Mix well.
  3. Grease a baking dish and spread the mixture evenly in it.
  4. Sprinkle mozzarella cheese generously over the top.
  5. Bake for 20-25 minutes until the cheese is golden and bubbly.
  6. Let cool slightly, garnish with fresh basil if desired, and serve.

Notes

For a richer flavor, consider using leftover rotisserie chicken. Feel free to add extra toppings such as olives or jalapeños.
