Ingredients
- 2 cups shredded chicken
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder

- Salt and pepper to taste
- 1 avocado, diced
- 1/2 cup shredded cheese
- Lime wedges
- Low-carb tortilla strips (or crushed pork rinds or cheese crisps)
Instructions
- Sauté diced onion and minced garlic in a large pot over medium heat for 2-3 minutes until translucent.
- Add shredded chicken, chicken broth, diced tomatoes, chili powder, cumin, salt, and pepper to the pot, stir to combine.
- Bring the mixture to a gentle simmer and cook for 15-20 minutes.
- Serve the soup in bowls topped with avocado, shredded cheese, lime juice, and crushed low-carb tortilla strips.
Notes
