Description

A creamy, hearty soup that’s perfect for chilly days, packed with flavor and easy to prepare.

Ingredients

  • 4 large potatoes, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Green onions for garnish
  • Bacon bits for garnish

Instructions

  1. In a large pot, sauté the onions and garlic until softened.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  3. Mash some of the potatoes for a thicker consistency, if desired.
  4. Stir in the heavy cream and shredded cheese until melted and creamy.
  5. Season with salt and pepper.
  6. Serve hot, garnished with green onions and bacon bits.

Notes

For extra flavor, consider using smoked bacon or additional spices like paprika. You can also blend the soup for a smoother texture.
