Description

Crispy loaded potato skins topped with cheese, bacon, and green onions – the perfect snack for any occasion.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the potatoes.
  3. Poke holes in them with a fork.
  4. Rub the potatoes all over with olive oil, salt, and pepper.
  5. Bake the potatoes for 45-60 minutes until tender.
  6. Remove from the oven and let cool slightly.
  7. Cut the potatoes in half and scoop out some of the flesh.
  8. Place the skins on a baking sheet and sprinkle cheese and bacon inside.
  9. Bake for an additional 10 minutes until the cheese is melted and bubbly.
  10. Top with green onions and serve with sour cream.
