Description

A comforting and hearty soup that brings the classic flavors of a baked potato into a creamy bowl. Perfect for cold nights or as a filling meal.


Ingredients

  • 4 large russet potatoes
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Bacon bits for garnish


Instructions

  1. Peel and cube the russet potatoes.
  2. In a large pot, sauté chopped onion, celery, and carrots in a bit of oil until softened.
  3. Add the cubed potatoes and chicken or vegetable broth. Bring to a boil and then reduce to a simmer until the potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth, or mash with a potato masher for a chunkier texture.
  5. Stir in the heavy cream, cheddar cheese, and sour cream. Season with salt and pepper to taste.
  6. Serve warm and garnish with green onions and bacon bits.

Notes

For a smoother texture, blend the soup longer. Adjust thickness with more broth or cream to your preference. Toppings add great flavor and texture!
