Ingredients
- 4 large russet potatoes
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped green onions for garnish
- Bacon bits for garnish
Instructions
- Peel and cube the russet potatoes.
- In a large pot, sauté chopped onion, celery, and carrots in a bit of oil until softened.
- Add the cubed potatoes and chicken or vegetable broth. Bring to a boil and then reduce to a simmer until the potatoes are tender.
- Use an immersion blender to puree the soup until smooth, or mash with a potato masher for a chunkier texture.
- Stir in the heavy cream, cheddar cheese, and sour cream. Season with salt and pepper to taste.
- Serve warm and garnish with green onions and bacon bits.
Notes
For a smoother texture, blend the soup longer. Adjust thickness with more broth or cream to your preference. Toppings add great flavor and texture!
