Description

Delicious and easy-to-make Linzer cookies filled with raspberry jam that impress without requiring advanced baking skills.


Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, all-purpose flour, cinnamon, and salt.
  3. In another bowl, cream together the butter and powdered sugar until smooth.
  4. Add the egg and vanilla extract to the butter mixture and stir well.
  5. Gradually combine the dry ingredients into the wet mixture until it forms cookie dough.
  6. Chill the dough for 30 minutes.
  7. Roll out the dough and cut into shapes, cutting the center out of half of the cookies.
  8. Bake for 12-15 minutes until lightly golden.
  9. Let cool and spread jam on the solid cookies, then top with the cut-out cookies.

Notes

Ensure to preheat the oven and chill the dough for better shaping. Use softened butter for the best texture.
