Delicious and easy-to-make Linzer cookies filled with raspberry jam that impress without requiring advanced baking skills.
Ingredients
- 1 cup almond flour
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, all-purpose flour, cinnamon, and salt.
- In another bowl, cream together the butter and powdered sugar until smooth.
- Add the egg and vanilla extract to the butter mixture and stir well.
- Gradually combine the dry ingredients into the wet mixture until it forms cookie dough.
- Chill the dough for 30 minutes.
- Roll out the dough and cut into shapes, cutting the center out of half of the cookies.
- Bake for 12-15 minutes until lightly golden.
- Let cool and spread jam on the solid cookies, then top with the cut-out cookies.
Notes
Ensure to preheat the oven and chill the dough for better shaping. Use softened butter for the best texture.
