Delightful chewy cookies loaded with chocolate, marshmallows, and cashews, perfect for sharing.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1 cup cashews, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs and vanilla until well combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
- Fold in the chocolate chips, mini marshmallows, and cashews.
- Drop large spoonfuls of dough onto a lined baking sheet.
- Bake for 10-12 minutes or until the edges are set but the centers are still soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
