Description
A simple, nourishing one-pot Lentil & Veggie Pilaf that is packed with protein and flavor, perfect for a quick meal.
Ingredients
- 1 cup lentils (green or brown)
- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Rinse the lentils under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until soft for 3-5 minutes.
- Add lentils, vegetable broth, cumin, and turmeric; stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add mixed vegetables and cook for an additional 10 minutes.
- Season with salt and pepper.
- Serve warm in bowls.
