Description

A simple, nourishing one-pot Lentil & Veggie Pilaf that is packed with protein and flavor, perfect for a quick meal.


Ingredients

  • 1 cup lentils (green or brown)
  • 2 cups vegetable broth
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until soft for 3-5 minutes.
  4. Add lentils, vegetable broth, cumin, and turmeric; stir well.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add mixed vegetables and cook for an additional 10 minutes.
  7. Season with salt and pepper.
  8. Serve warm in bowls.
