Description
A simple yet flavorful lentil curry that’s perfect for lazy days, packed with protein and fiber.
Ingredients
- 1 cup lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon cumin
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water.
- In a pot, heat the oil over medium heat.
- Add chopped onion, garlic, and ginger, and sauté until soft.
- Stir in curry powder and cumin, and cook for 1 minute.
- Add lentils, vegetable broth, and coconut milk, and bring to a boil.
- Reduce heat and simmer for 30 minutes or until lentils are tender.
- Add salt to taste.
- Garnish with fresh cilantro before serving.
Notes
Avoid skipping the rinsing step and be sure to taste as you go for the best results.
