Description

A simple yet flavorful lentil curry that’s perfect for lazy days, packed with protein and fiber.


Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish


Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, heat the oil over medium heat.
  3. Add chopped onion, garlic, and ginger, and sauté until soft.
  4. Stir in curry powder and cumin, and cook for 1 minute.
  5. Add lentils, vegetable broth, and coconut milk, and bring to a boil.
  6. Reduce heat and simmer for 30 minutes or until lentils are tender.
  7. Add salt to taste.
  8. Garnish with fresh cilantro before serving.

Notes

Avoid skipping the rinsing step and be sure to taste as you go for the best results.
