A tasty and easy dish featuring juicy chicken thighs, fresh broccoli, and hearty potatoes, all cooked on one pan for a simple cleanup.
Ingredients
- 4 chicken thighs
- 2 cups broccoli florets
- 2 cups potatoes, chopped
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and Italian seasoning.
- Add the chicken thighs to the bowl and coat them in the marinade. Let them sit for 15 minutes.
- On a sheet pan, arrange the chopped potatoes and broccoli. Drizzle with olive oil and season with salt and pepper.
- Place the marinated chicken thighs on top of the vegetables.
- Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve warm.
Notes
For stronger flavor, marinate the chicken overnight. You can use other vegetables like carrots or bell peppers.
