Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 5-8 drops yellow food coloring (optional)
  • 1/4 cup sugar (for rolling)
  • 3/4 cup powdered sugar (for rolling)


Instructions

  1. In a large bowl, mix together the flour, salt, and baking soda. Set aside.
  2. In the bowl of your stand mixer, beat the softened butter and sugar until fluffy, about 2 minutes.
  3. Add the egg, lemon juice, lemon zest, vanilla extract, and food coloring (if using) to the mixture and mix to combine.
  4. Slowly add the dry ingredients and mix until well incorporated. Cover and refrigerate for 2 hours.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Scoop out the dough and roll into balls. Roll in regular sugar, then in powdered sugar.
  7. Place dough balls on baking sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, then let cool on sheets for 5 minutes before transferring to a cooling rack.

Notes

Ensure butter is softened for easy mixing. Don’t skip the chilling step for better shape and flavor.
