Description

Delightful Lemon Blueberry Cookies combining zesty lemon flavor with sweet blueberries, perfect for a snack or dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup frozen wild blueberries


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate larger bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the egg, followed by the lemon juice and lemon zest, mixing until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the frozen blueberries into the cookie dough.
  7. Drop spoonfuls of the dough onto a lined baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes until the edges are set but centers remain soft.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
