Ingredients

- 2 medium zucchini, thinly sliced
- 2 yellow squash, thinly sliced
- 1 onion, thinly sliced
- 1 bell pepper, sliced
- 1 tomato (or 6 cherry tomatoes), sliced
- 1 cup mushrooms (optional)
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter
- ½ cup mozzarella cheese
- ¼ cup Parmesan cheese
- Fresh basil, oregano, thyme (to taste)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a medium-sized glass or ceramic baking dish.
- Slice all vegetables into thin rounds.
- Begin layering in this order: zucchini, squash, onions, mushrooms, tomatoes.
- Season each layer with salt, pepper, garlic, and herbs.
- Drizzle with olive oil or dot with butter between layers.
- Add layers of mozzarella and Parmesan cheese on top.
- Cover with foil and bake for 30 minutes.
- Uncover and bake another 10–15 minutes until top is golden.
- Let it rest for a few minutes before serving.
Notes
This dish pairs well with grilled meats or can be served as a vegetarian main. For extra richness, add a layer of ricotta between the veggies.
