Description

Ingredients

  • 2 medium zucchini, thinly sliced
  • 2 yellow squash, thinly sliced
  • 1 onion, thinly sliced
  • 1 bell pepper, sliced
  • 1 tomato (or 6 cherry tomatoes), sliced
  • 1 cup mushrooms (optional)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • ½ cup mozzarella cheese
  • ¼ cup Parmesan cheese
  • Fresh basil, oregano, thyme (to taste)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a medium-sized glass or ceramic baking dish.
  3. Slice all vegetables into thin rounds.
  4. Begin layering in this order: zucchini, squash, onions, mushrooms, tomatoes.
  5. Season each layer with salt, pepper, garlic, and herbs.
  6. Drizzle with olive oil or dot with butter between layers.
  7. Add layers of mozzarella and Parmesan cheese on top.
  8. Cover with foil and bake for 30 minutes.
  9. Uncover and bake another 10–15 minutes until top is golden.
  10. Let it rest for a few minutes before serving.

Notes

This dish pairs well with grilled meats or can be served as a vegetarian main. For extra richness, add a layer of ricotta between the veggies.
