Description
A warm and hearty dish of Korean beef noodles made easy in a slow cooker, perfect for cozy nights in.
Ingredients
- 1 lb beef (brisket or chuck), cut into strips
- 4 cups beef broth
- 2 cups noodles (egg noodles or rice noodles)
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- In a slow cooker, combine the beef strips, beef broth, soy sauce, sesame oil, garlic, ginger, and vegetables. Season with salt and pepper.
- Cook on low for 6 to 8 hours or until the beef is tender.
- About 30 minutes before serving, cook the noodles according to package instructions and add them to the slow cooker.
- Stir everything together and cook for an additional 30 minutes.
- Serve hot, garnished with green onions.
Notes
Feel free to substitute beef with chicken or tofu, and get creative with your choice of vegetables.
