Description

A warm and hearty dish of Korean beef noodles made easy in a slow cooker, perfect for cozy nights in.


Ingredients

  • 1 lb beef (brisket or chuck), cut into strips
  • 4 cups beef broth
  • 2 cups noodles (egg noodles or rice noodles)
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions, for garnish


Instructions

  1. In a slow cooker, combine the beef strips, beef broth, soy sauce, sesame oil, garlic, ginger, and vegetables. Season with salt and pepper.
  2. Cook on low for 6 to 8 hours or until the beef is tender.
  3. About 30 minutes before serving, cook the noodles according to package instructions and add them to the slow cooker.
  4. Stir everything together and cook for an additional 30 minutes.
  5. Serve hot, garnished with green onions.

Notes

Feel free to substitute beef with chicken or tofu, and get creative with your choice of vegetables.
