Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound kielbasa, sliced
  • 4 cups chicken broth
  • 4 large potatoes, diced
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat a large pot over medium heat and add olive oil. Sauté the chopped onion until softened, about 2 minutes.
  2. Add minced garlic and stir until fragrant, about 1 minute.
  3. Add sliced kielbasa and cook until browned.
  4. Stir in diced potatoes, then pour in chicken broth.
  5. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  6. Stir in heavy cream and dried thyme; season with salt and pepper.
