Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound kielbasa, sliced
- 4 cups chicken broth
- 4 large potatoes, diced
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat and add olive oil. Sauté the chopped onion until softened, about 2 minutes.
- Add minced garlic and stir until fragrant, about 1 minute.
- Add sliced kielbasa and cook until browned.
- Stir in diced potatoes, then pour in chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in heavy cream and dried thyme; season with salt and pepper.
