Description

A delicious and comforting low-carb soup packed with flavor, perfect for a keto lifestyle.


Ingredients

  • 1 head of cauliflower, chopped
  • 4 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. In a large pot, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add diced onion and garlic to the pot and sauté until translucent.
  3. Add chopped cauliflower and chicken broth to the pot. Bring to a boil, then lower heat and simmer until the cauliflower is tender.
  4. Use an immersion blender to puree the soup to your desired consistency.
  5. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  6. Season with salt and pepper, then serve topped with crumbled bacon and chopped green onions.

Notes

For a smokier flavor, try using smoked bacon. Adjust the thickness by blending more or less of the soup.
