A delicious and comforting low-carb soup packed with flavor, perfect for a keto lifestyle.
Ingredients
- 1 head of cauliflower, chopped
- 4 slices of bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot.
- Add diced onion and garlic to the pot and sauté until translucent.
- Add chopped cauliflower and chicken broth to the pot. Bring to a boil, then lower heat and simmer until the cauliflower is tender.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in heavy cream and shredded cheddar cheese until melted and combined.
- Season with salt and pepper, then serve topped with crumbled bacon and chopped green onions.
Notes
For a smokier flavor, try using smoked bacon. Adjust the thickness by blending more or less of the soup.
