Ingredients
- 1 head cauliflower, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup cooked bacon, crumbled
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- In a large pot, combine the chopped cauliflower and broth. Bring to a boil and simmer until the cauliflower is tender, about 10 minutes.
- Use an immersion blender to purée the cauliflower until smooth.
- Stir in the heavy cream, cheese, and crumbled bacon.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions.
Notes
For a thicker soup, add more cauliflower or reduce the broth. Experiment with different cheese varieties for unique flavors.
