Ingredients

  • 1 head cauliflower, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked bacon, crumbled
  • 1/2 cup chopped green onions
  • Salt and pepper to taste


Instructions

  1. In a large pot, combine the chopped cauliflower and broth. Bring to a boil and simmer until the cauliflower is tender, about 10 minutes.
  2. Use an immersion blender to purée the cauliflower until smooth.
  3. Stir in the heavy cream, cheese, and crumbled bacon.
