Ingredients
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 head cauliflower, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Crumbled bacon for garnish
- Chives or green onions for garnish
Instructions
- Sauté onion and garlic in a large pot over medium heat for 3-5 minutes until soft.
- Add chopped cauliflower and pour in the broth. Bring to a boil.
- Simmer until cauliflower is tender, about 10-15 minutes.
- Blend the soup until smooth using an immersion blender.
- Return to low heat, then stir in heavy cream and cheese until melted.
- Season with salt and pepper to taste.
- Serve in bowls with crumbled bacon and garnish.
