Description

A creamy, comforting soup combining the delightful flavors of cheese and bacon, perfect for those on a ketogenic diet.


Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 head cauliflower, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Crumbled bacon for garnish
  • Chives or green onions for garnish


Instructions

  1. Sauté onion and garlic in a large pot over medium heat for 3-5 minutes until soft.
  2. Add chopped cauliflower and pour in the broth. Bring to a boil.
  3. Simmer until cauliflower is tender, about 10-15 minutes.
  4. Blend the soup until smooth using an immersion blender.
  5. Return to low heat, then stir in heavy cream and cheese until melted.
  6. Season with salt and pepper to taste.
  7. Serve in bowls with crumbled bacon and garnish.
