A delicious low-carb dish featuring shrimp in a creamy, cheesy sauce that’s perfect for keto diets.
Ingredients
- 2 pounds large shrimp (peeled, deveined, tails removed)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 4 tablespoons butter
- 1/2 cup finely chopped onion
- 4 cloves garlic (minced)
- 2 tablespoons fresh basil (chopped or 1 tablespoon dried)
- 1/8 teaspoon ground nutmeg
- 1 cup heavy whipping cream
- 1 cup grated parmesan cheese (divided)
- 1 cup shredded Monterey Jack cheese
- 1/2 cup crushed pork rind crumbs
Instructions
- Preheat your oven to 375°F (190°C). Grease a large baking dish with butter or cooking spray.
- Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper. Sear the shrimp for 1–2 minutes on each side until they are just pink. Remove the shrimp from the skillet and set aside.
- In the same skillet, melt the butter. Add the chopped onion and sauté until soft, about 3–4 minutes. Then, add the garlic, basil, and nutmeg. Cook for another 30 seconds until fragrant.
- Pour in the heavy cream and let it simmer for 3–4 minutes until slightly thickened. Stir in 1/2 cup of the parmesan cheese and all the Monterey Jack cheese. Mix until smooth and season to taste.
- Place the shrimp in the prepared baking dish. Pour the cream sauce evenly over the shrimp.
- In a small bowl, mix the remaining 1/2 cup of parmesan with crushed pork rinds. Sprinkle this mixture over the dish.
- Bake in the preheated oven for 25 minutes until the top is golden and the sauce is bubbling.
Notes
Use fresh shrimp for the best flavor. Feel free to adjust the seasonings to your taste. You can add spinach or kale for extra nutrients.
