A vibrant pasta salad that combines sweet corn, tangy lime, and creamy feta, perfect for summer gatherings and BBQs.
Ingredients
- 8 oz pasta (rotini or penne)
- 2 cups corn (fresh, canned, or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup mayonnaise
- 1 tablespoon fresh lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooled pasta with corn, cherry tomatoes, red onion, cilantro, and feta.
- In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta and vegetable mixture and toss gently.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Store covered in the refrigerator for 3-4 days or freeze leftovers for up to 2 months. Thaw in the fridge before serving.
