A vibrant and refreshing pasta salad perfect for summer gatherings, packed with sweet corn and a creamy dressing.
Ingredients
- 8 oz pasta
- 2 cups corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 lime, juiced
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, corn, red bell pepper, red onion, cherry tomatoes, and cilantro.
- In a separate bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta mixture and toss until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Serve cold or at room temperature, and garnish with extra cilantro or lime wedges. Can be stored in an airtight container for up to 3 days.
