Ingredients
- 3-4 lb beef chuck roast
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup French onion soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
- Season the chuck roast with salt and pepper and sear it on all sides until browned.
- Remove the roast and set aside.
- In the same pot, add the onions and cook until softened, about 5-7 minutes.
- Add the garlic and cook for another minute.
- Stir in the beef broth, French onion soup, Worcestershire sauce, and thyme.
- Return the roast to the pot.
- Cover with a lid and transfer to the preheated oven.
- Roast for 3-4 hours, or until the meat is fork-tender.
- Remove from the oven and let rest before serving.
Notes
For a deeper flavor, caramelize the onions longer and ensure the roast is well-seared.
