Description

Ingredients

  • 3-4 lb beef chuck roast
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup French onion soup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat.
  3. Season the chuck roast with salt and pepper and sear it on all sides until browned.
  4. Remove the roast and set aside.
  5. In the same pot, add the onions and cook until softened, about 5-7 minutes.
  6. Add the garlic and cook for another minute.
  7. Stir in the beef broth, French onion soup, Worcestershire sauce, and thyme.
  8. Return the roast to the pot.
  9. Cover with a lid and transfer to the preheated oven.
  10. Roast for 3-4 hours, or until the meat is fork-tender.
  11. Remove from the oven and let rest before serving.

Notes

For a deeper taste, let the onions caramelize longer before adding other ingredients. Consider adding a spoonful of brown sugar for a sweeter flavor.
