Description
Delicious jerk meatballs simmered in a creamy coconut curry sauce, blending bold Caribbean flavors.
Ingredients
- 1 lb ground meat (beef, chicken, or turkey)
- 2 tbsp jerk seasoning
- 1/2 cup breadcrumbs
- 1 egg
- 1 can (13.5 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 red bell pepper, diced
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground meat, jerk seasoning, breadcrumbs, and egg. Mix well.
- Shape the mixture into small meatballs and arrange them on a baking sheet.
- Bake for 20 minutes or until browned and cooked through.
- While the meatballs bake, heat vegetable oil in a pan and sauté chopped onion, minced garlic, and ginger until softened.
- Add diced red bell pepper and cook for an additional 2 minutes.
- Pour in coconut milk and bring to a gentle simmer.
- Add baked meatballs to the coconut sauce and let cook together for 5 minutes.
- Season with salt and pepper, then serve hot.
Notes
For added heat, adjust the amount of jerk seasoning and serve with lime.
