Description

Delicious jerk meatballs simmered in a creamy coconut curry sauce, blending bold Caribbean flavors.


Ingredients

  • 1 lb ground meat (beef, chicken, or turkey)
  • 2 tbsp jerk seasoning
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 can (13.5 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 red bell pepper, diced
  • 2 tbsp vegetable oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground meat, jerk seasoning, breadcrumbs, and egg. Mix well.
  3. Shape the mixture into small meatballs and arrange them on a baking sheet.
  4. Bake for 20 minutes or until browned and cooked through.
  5. While the meatballs bake, heat vegetable oil in a pan and sauté chopped onion, minced garlic, and ginger until softened.
  6. Add diced red bell pepper and cook for an additional 2 minutes.
  7. Pour in coconut milk and bring to a gentle simmer.
  8. Add baked meatballs to the coconut sauce and let cook together for 5 minutes.
  9. Season with salt and pepper, then serve hot.

Notes

For added heat, adjust the amount of jerk seasoning and serve with lime.
