Ingredients
- 4 eggs
- 2 cups cooked rice
- 1 carrot, diced
- 1 onion, diced
- 1/2 cup peas
- 2 tablespoons ketchup
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat oil in a pan and sauté onions and carrots until soft.
- Add peas and cooked rice, stir, and cook for a few minutes.
- Stir in ketchup and soy sauce, adding salt and pepper to taste.
- In a separate bowl, whisk eggs and season with salt.
- Heat a non-stick pan, add a little oil, and pour in the eggs, swirling to coat the pan.
- Cook until the edges are set but the center is slightly runny.
- Spoon the fried rice onto one side of the omelet and fold it over.
- Slide onto a plate and serve.
Notes
Use day-old cooked rice for better texture. Customize the filling with proteins and keep the omelet light by cooking gently.
