Description

A delicious and easy-to-prepare dish that combines umami flavors of mushrooms with rich miso, perfect as a hearty side or main course over rice.


Ingredients

  • 500g fresh mushrooms (shiitake, cremini, or button)
  • 3 tablespoons miso paste (white or red)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Optional: chili flakes for extra heat


Instructions

  1. Gently wipe the mushrooms with a damp cloth to remove any dirt.
  2. Depending on their size, either halve or slice the mushrooms into uniform pieces.
  3. In a large skillet, heat the sesame oil over medium heat until it shimmers.
  4. Add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  5. Toss the sliced mushrooms into the skillet and stir to coat. Cook for about 5-7 minutes until tender.
  6. In a small bowl, mix the miso paste and soy sauce with warm water to create a smooth sauce.
  7. Pour the miso sauce over the mushrooms. Stir to combine and cook for another 2-3 minutes.
  8. Taste and adjust seasoning; add chili flakes if desired.
  9. Remove from heat, garnish with green onions and sesame seeds, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
