Description
A rich and dense Jamaican Black Cake infused with dried fruits and rum, perfect for festive occasions.
Ingredients
- 2 cups mixed dried fruits
- 1 cup dark rum
- 1 cup butter (softened)
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon allspice
- ¼ teaspoon salt
- ½ cup molasses
- 1 teaspoon vanilla extract
Instructions
- Soak dried fruits in dark rum overnight.
- Preheat oven to 300°F (150°C) and grease a cake pan.
- Cream together butter and brown sugar until fluffy (3-5 minutes).
- Incorporate eggs one at a time, mixing well after each addition.
- Stir in soaked fruits, molasses, and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, allspice, and salt.
- Gradually combine dry ingredients with the wet mixture until just mixed.
- Pour batter into the prepared pan and smooth the top.
- Bake in preheated oven for 1.5 to 2 hours or until a toothpick comes out clean.
- Allow to cool in the pan for 20 minutes before transferring to a wire rack.
Notes
For best flavor, soak the fruits for up to a week. Store in an airtight container to maintain freshness.
