Description

A rich and dense Jamaican Black Cake infused with dried fruits and rum, perfect for festive occasions.


Ingredients

  • 2 cups mixed dried fruits
  • 1 cup dark rum
  • 1 cup butter (softened)
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon allspice
  • ¼ teaspoon salt
  • ½ cup molasses
  • 1 teaspoon vanilla extract


Instructions

  1. Soak dried fruits in dark rum overnight.
  2. Preheat oven to 300°F (150°C) and grease a cake pan.
  3. Cream together butter and brown sugar until fluffy (3-5 minutes).
  4. Incorporate eggs one at a time, mixing well after each addition.
  5. Stir in soaked fruits, molasses, and vanilla extract.
  6. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, allspice, and salt.
  7. Gradually combine dry ingredients with the wet mixture until just mixed.
  8. Pour batter into the prepared pan and smooth the top.
  9. Bake in preheated oven for 1.5 to 2 hours or until a toothpick comes out clean.
  10. Allow to cool in the pan for 20 minutes before transferring to a wire rack.
