Cheesy, spicy, and cozy, these jalapeño popper chicken enchiladas are the ultimate comfort food, perfect for a quick meal.
Ingredients
- 2 cups cooked shredded chicken
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded monterey jack cheese
- 1/2 cup jalapeños, diced (fresh or pickled)
- 10 small flour tortillas
- 1 can (10 oz) enchilada sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix together shredded chicken, cream cheese, cheddar cheese, monterey jack cheese, diced jalapeños, garlic powder, onion powder, salt, and pepper until well combined.
- Warm the tortillas slightly in the microwave to make them easier to roll.
- Spoon a portion of the chicken mixture onto each tortilla and roll tightly.
- Place the rolled tortillas seam-side down in a greased baking dish.
- Pour enchilada sauce over the top of the rolled enchiladas.
- Sprinkle remaining cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro if desired.
- Serve hot and enjoy!
Notes
Don’t overfill the tortillas or you will have a cheesy mess. Warm tortillas make rolling easier and if you love extra saucy enchiladas, double up on the sauce.
