Delicious and carb-free Italian Sub Roll-Ups filled with savory meats and toppings, perfect for a quick lunch or appetizer.
Ingredients
- 4 Slices Genoa Salami
- 4 Slices Mortadella
- 4 Slices Sopressata
- 4 Slices Pepperoni
- 4 Slices Provolone (omit for dairy-free option)
- Paleo Lime Mayo or store-bought mayo
- Shredded Lettuce
- Extra toppings (banana peppers, jalapeño peppers, roasted red peppers, black olives)
- Avocado Oil or Olive Oil
- Apple Cider Vinegar
- Italian Seasoning
- Toothpicks
Instructions
- Layer the meat slices from largest to smallest: Genoa Salami, Mortadella, Sopressata, Pepperoni.
- Spread a thin layer of mayo over the meat stack, leaving space at the top to prevent spilling when rolling.
- Place a slice of provolone on top of the mayo, positioned halfway down.
- Add a small handful of shredded lettuce and any extra toppings on the lower half of the stack.
- Roll the stack tightly from the bottom of the cheese, securing with a toothpick.
- To serve, mix 2 parts oil with 1 part vinegar, sprinkle Italian seasoning, and enjoy dipping your roll-ups.
Notes
These roll-ups can be made ahead of time and stored in plastic wrap in the fridge for up to a week. Great for quick snacks or lunches!
