Instructions

  1. Heat olive oil in a large pot over medium heat. Add carrots, onions, and celery. Sauté for about 5-7 minutes.
  2. Add garlic and cook for another minute. Season with salt and pepper. Add parmesan rind if using.
  3. Pour in chicken or vegetable broth. Bring to a boil, then reduce to a simmer and cook for 20 minutes.
  4. Stir in pastina, cook for 5-10 minutes until tender.
  5. Adjust seasoning with salt, pepper, or lemon juice. Remove parmesan rind.
  6. Serve in bowls, garnished with parmesan cheese or fresh herbs if desired.
