Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups vegetable broth
  • 1 cup spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add chopped onion and minced garlic, sauté for 2-3 minutes until fragrant.
  3. Incorporate diced carrots and celery, cooking for a few more minutes.
  4. Pour in the vegetable broth and bring to a gentle boil.
  5. Add chopped spinach, dried oregano, thyme, salt and pepper.
  6. Reduce heat and let simmer for about 20 minutes.
  7. Serve warm with fresh bread.
