Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups vegetable broth
- 1 cup spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add chopped onion and minced garlic, sauté for 2-3 minutes until fragrant.
- Incorporate diced carrots and celery, cooking for a few more minutes.
- Pour in the vegetable broth and bring to a gentle boil.
- Add chopped spinach, dried oregano, thyme, salt and pepper.
- Reduce heat and let simmer for about 20 minutes.
- Serve warm with fresh bread.
