Ingredients
- 1 cup pastina pasta
- 4 cups chicken stock
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, chopped
- 1 Parmesan rind
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnish
Instructions
- Pour the chicken stock into a large pot and heat it over medium heat.
- Chop the carrots, celery, and onion into small pieces, then add them to the heated stock and simmer.
- Add the pastina pasta to the pot and cook according to package instructions.
- Add the Parmesan rind and let it simmer to enhance the flavor.
- Season to taste with salt and pepper.
- Remove the pot from heat, discard the Parmesan rind, and serve the soup in bowls.
- Garnish with fresh parsley before serving.

For a vegetarian option, use vegetable stock and omit the Parmesan rind.
