Ingredients

  • 1 cup pastina pasta
  • 4 cups chicken stock
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 1 Parmesan rind
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Pour the chicken stock into a large pot and heat it over medium heat.
  2. Chop the carrots, celery, and onion into small pieces, then add them to the heated stock and simmer.
  3. Add the pastina pasta to the pot and cook according to package instructions.
  4. Add the Parmesan rind and let it simmer to enhance the flavor.
  5. Season to taste with salt and pepper.
  6. Remove the pot from heat, discard the Parmesan rind, and serve the soup in bowls.
  7. Garnish with fresh parsley before serving.

Notes

For a vegetarian option, use vegetable stock and omit the Parmesan rind.
