Description

A quick and easy Italian dish featuring tender chicken breasts in a zesty lemon sauce with capers.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 cup low-sodium chicken broth
  • 2 tablespoons capers, rinsed
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Dredge chicken in flour, shaking off the excess.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook chicken for 5-7 minutes on each side, until golden brown.
  5. Remove chicken from skillet and set aside, reserving oil in the pan.
  6. Add garlic to the skillet and sauté for 1 minute.
  7. Stir in lemon juice, chicken broth, and capers.
  8. Return chicken to the skillet and simmer for 5 minutes.
  9. Garnish with fresh parsley before serving.

Notes

Use fresh lemon juice for the best flavor. Avoid overcooking the chicken to keep it juicy.
