A quick and easy Italian dish featuring tender chicken breasts in a zesty lemon sauce with capers.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 cup low-sodium chicken broth
- 2 tablespoons capers, rinsed
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken breasts with salt and pepper.
- Dredge chicken in flour, shaking off the excess.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 5-7 minutes on each side, until golden brown.
- Remove chicken from skillet and set aside, reserving oil in the pan.
- Add garlic to the skillet and sauté for 1 minute.
- Stir in lemon juice, chicken broth, and capers.
- Return chicken to the skillet and simmer for 5 minutes.
- Garnish with fresh parsley before serving.
Notes
Use fresh lemon juice for the best flavor. Avoid overcooking the chicken to keep it juicy.
