Ingredients

For the Salad:

  • 1 lb uncooked bow tie pasta
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, chopped
  • ½ cup cubed salami
  • ⅓ cup cubed provolone cheese
  • ¼ cup red bell pepper, chopped
  • ¼ cup fresh parsley, minced
  • 1 can (2.25 oz) sliced black olives, drained

For the Dressing:

  • ¼ cup red wine vinegar
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • ½ cup olive oil


Instructions

  1. Cook Pasta: Boil the bow tie pasta in salted water until al dente. Drain and rinse under cold water to stop cooking.
  2. Combine Ingredients: In a large bowl, mix the cooked pasta, cherry tomatoes, red onion, salami, provolone cheese, red bell pepper, parsley, and black olives.
  3. Make the Dressing: In a small bowl, whisk together red wine vinegar, Parmesan cheese, Dijon mustard, garlic, Italian seasoning, salt, and pepper. Slowly whisk in the olive oil until fully emulsified.
  4. Assemble the Salad: Pour the vinaigrette over the pasta mixture. Toss gently until evenly coated.
  5. Chill: Cover and refrigerate for 1–2 hours before serving to let the flavors develop.

Notes

For a vegetarian version, omit the salami. Feel free to add marinated artichokes or banana peppers for extra zing.
