This Italian Bow Tie Pasta Salad is packed with bold flavors from salami, provolone, olives, and a tangy homemade red wine vinaigrette. Perfect for potlucks, picnics, or an easy lunch.
Ingredients
For the Salad:
- 1 lb uncooked bow tie pasta
- 1 cup cherry tomatoes, halved
- ½ cup red onion, chopped
- ½ cup cubed salami
- ⅓ cup cubed provolone cheese
- ¼ cup red bell pepper, chopped
- ¼ cup fresh parsley, minced
- 1 can (2.25 oz) sliced black olives, drained
For the Dressing:
- ¼ cup red wine vinegar
- 2 tbsp grated Parmesan cheese
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 tsp salt
- ½ tsp pepper
- ½ cup olive oil
Instructions
- Cook Pasta: Boil the bow tie pasta in salted water until al dente. Drain and rinse under cold water to stop cooking.
- Combine Ingredients: In a large bowl, mix the cooked pasta, cherry tomatoes, red onion, salami, provolone cheese, red bell pepper, parsley, and black olives.
- Make the Dressing: In a small bowl, whisk together red wine vinegar, Parmesan cheese, Dijon mustard, garlic, Italian seasoning, salt, and pepper. Slowly whisk in the olive oil until fully emulsified.
- Assemble the Salad: Pour the vinaigrette over the pasta mixture. Toss gently until evenly coated.
- Chill: Cover and refrigerate for 1–2 hours before serving to let the flavors develop.
Notes
For a vegetarian version, omit the salami. Feel free to add marinated artichokes or banana peppers for extra zing.
