A rich and tantalizing Nigerian chicken stew that’s packed with dynamic flavors and perfect for any occasion.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 2-3 fresh chilies, chopped
- 1 can (400g) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon thyme
- 1 teaspoon curry powder
- Salt and pepper to taste
- 1-2 cups chicken broth (or water)
- Fresh parsley or cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
- Stir in garlic, ginger, and fresh chilies; cook for an additional minute.
- Add the chicken pieces and brown on all sides.
- Mix in diced tomatoes, tomato paste, thyme, curry powder, salt, and pepper. Stir to combine.
- Pour in chicken broth and bring to a gentle simmer.
- Cover and cook on low heat for 30-40 minutes until the chicken is tender.
- Adjust seasoning if necessary, then serve hot over rice or with flatbreads, garnished with parsley or cilantro.
Notes
For extra heat, add more chilies or a pinch of cayenne pepper. Can be made ahead of time and tastes even better the next day.
