Description

A rich and tantalizing Nigerian chicken stew that’s packed with dynamic flavors and perfect for any occasion.


Ingredients

  • 2 lbs chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2-3 fresh chilies, chopped
  • 1 can (400g) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1-2 cups chicken broth (or water)
  • Fresh parsley or cilantro for garnish


Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.
  2. Stir in garlic, ginger, and fresh chilies; cook for an additional minute.
  3. Add the chicken pieces and brown on all sides.
  4. Mix in diced tomatoes, tomato paste, thyme, curry powder, salt, and pepper. Stir to combine.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Cover and cook on low heat for 30-40 minutes until the chicken is tender.
  7. Adjust seasoning if necessary, then serve hot over rice or with flatbreads, garnished with parsley or cilantro.

Notes

For extra heat, add more chilies or a pinch of cayenne pepper. Can be made ahead of time and tastes even better the next day.
