Description
A quick and easy white chicken chili recipe made in the Instant Pot, perfect for cozy dinners.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Turn on the Instant Pot and select the sauté function. Sauté the onions until soft.
- Add the garlic and cook until fragrant.
- Add chicken, beans, corn, broth, cumin, chili powder, salt, and pepper.
- Seal the Instant Pot lid and set to high pressure for 15 minutes.
- Once cooking is complete, quick release the pressure carefully.
- Shred the chicken and stir to combine.
- Serve hot with your choice of toppings.

Toppings can include avocado, cheese, or lime. Alternatives for chicken and broth are suggested for different dietary needs.
