Description

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Turn on the Instant Pot and select the sauté function. Sauté the onions until soft.
  2. Add the garlic and cook until fragrant.
  3. Add chicken, beans, corn, broth, cumin, chili powder, salt, and pepper.
  4. Seal the Instant Pot lid and set to high pressure for 15 minutes.
  5. Once cooking is complete, quick release the pressure carefully.
  6. Shred the chicken and stir to combine.
  7. Serve hot with your choice of toppings.
