Delightful iced oatmeal cookies that combine soft, chewy goodness with a sweet glaze, perfect for a snack with milk or coffee.
Ingredients
- 1/2 cup butter (softened)
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg (at room temperature)
- 1 & 1/4 cup old fashioned whole rolled oats
- 1 cup all-purpose flour
- 1/4 tsp cinnamon
- Pinch of nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup powdered sugar
- 1.5 tbsp milk
- 1/4 tsp vanilla
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until well combined.
- Add in the egg and vanilla extract and mix until the mixture is light and fluffy.
- Gradually mix in the flour, old-fashioned oats, cinnamon, nutmeg, baking soda, and salt, scraping the sides of the bowl to combine well.
- Using a large cookie scoop, scoop out 8 equally sized cookie dough balls and place them on the prepared baking sheet, gently pressing down to make them about 1 inch thick.
- Bake for about 10 minutes, ensuring they remain soft and gooey in the center.
- Let the cookies cool on the baking sheet for 20 minutes before moving to a cooling rack.
- Prepare the glaze by mixing the powdered sugar, milk, and vanilla until smooth, then drizzle over the cooled cookies.
Notes
For best results, use softened butter and don’t skip the chilling time to ensure softer cookies. Feel free to customize with chocolate chips or dried fruit.
