Description

Ingredients

  • 1 pound fresh okra, trimmed and halved lengthwise
  • 2 teaspoons vegetable oil
  • ½ teaspoon table salt
  • Optional: Smoked paprika, garlic powder, lemon zest, or za’atar
  • Suggested Dip: Spicy red pepper mayo

Instructions

  1. Preheat the oven to 425°F (220°C) and position the rack in the middle.
  2. In a bowl, toss okra halves with oil and salt until well coated.
  3. Arrange the okra cut-side down in a single layer on a rimmed baking sheet.
  4. Cover the sheet tightly with aluminum foil and roast for 12–15 minutes, until the okra is bright green and tender.
  5. Remove the foil and continue roasting for 7–12 minutes, until cut sides are well browned and crispy.
  6. Let rest on the baking sheet for 5 minutes before serving.
  7. Optional: Sprinkle with additional spices or serve with your favorite dipping sauce.

Notes

This two-stage roasting method locks in moisture while achieving crisp edges. Great with Mediterranean spices or smoky dips.
